Step 1: Soak equal parts of rice and urad dal in water for at least 6 hours. This will help in achieving a smooth batter.
Step 2: Grind the soaked rice and dal together with some water to make a thick and smooth batter. Let it ferment overnight.
Step 3: Before making dosas, add some water to the batter to achieve a pouring consistency. Mix well and add salt to taste.
Step 4: Heat a non-stick tawa or griddle on medium-high heat. Sprinkle some water on it, if it sizzles, the tawa is ready.
Step 5: Take a ladleful of batter and pour it in the center of the tawa. Using the back of the ladle, spread the batter in a circular motion.
Step 6: Drizzle some oil or ghee around the edges of the dosa. Let it cook for a minute or until the edges start to turn golden brown.
Step 7: Flip the dosa and let it cook for another minute. You can add your desired filling at this point, such as potato masala or cheese.
Step 8: Fold the dosa in half and let it cook for a few seconds. Then fold it again to form a triangle shape. Your dosa is now ready!
